Cream of Amaranth

Ingredients
- 1/2 cup amaranth
- 1 cup water
- 6 Tbsp. milk of choice
- 2 Tbsp. honey or maple syrup
- 1/2 tsp. cinnamon
- Coconut, sliced almonds, fresh berries, etc., optional
Instructions
- Bring the water and amaranth to a boil. Reduce heat to low, cover and let simmer 20-25 minutes or until water is mostly absorbed.
- Portion mixture into two bowls and add the milk, sweetener, cinnamon and any additional toppings you desire.
