Creamy Turmeric Pasta
Yields 6 servings
Ingredients
- 1 lb. spaghetti
- 2 Tbsp. butter
- 1 large shallot, thinly sliced
- 2 garlic cloves, thinly sliced
- Salt and pepper to taste
- 1 1/2 tsp. turmeric, ground
- 1 cup half & half
- 2 cups Parmesan
- 4 Tbsp. chives, finely chopped
Instructions
- Prepare the spaghetti according to package instructions. Reserve 1 cup of the pasta cooking water and set aside.
- In the meantime, melt the butter in a large saucepan over medium heat. Add the shallot, garlic, salt and pepper. Cook until golden brown.
- Add the half and half and stir to combine. Bring to a light simmer then add the Parmesan and mix until melted. If the mixture is too thick, add a small amount of the pasta water and whisk to thin until desired thickness is achieved.
- Next add the drained spaghetti and toss with the sauce, then serve. Garnish with chives.
