Creamy Turmeric Pasta

Yields 6 servings

Ingredients

  • 1 lb. spaghetti
  • 2 Tbsp. butter
  • 1 large shallot, thinly sliced
  • 2 garlic cloves, thinly sliced
  • Salt and pepper to taste
  • 1 1/2 tsp. turmeric, ground
  • 1 cup half & half
  • 2 cups Parmesan
  • 4 Tbsp. chives, finely chopped

Instructions

  1. Prepare the spaghetti according to package instructions. Reserve 1 cup of the pasta cooking water and set aside.
  2. In the meantime, melt the butter in a large saucepan over medium heat. Add the shallot, garlic, salt and pepper. Cook until golden brown.
  3. Add the half and half and stir to combine. Bring to a light simmer then add the Parmesan and mix until melted. If the mixture is too thick, add a small amount of the pasta water and whisk to thin until desired thickness is achieved.
  4. Next add the drained spaghetti and toss with the sauce, then serve. Garnish with chives.
