Crispy Spinach and Chickpea Fritters

Yields 6 servings

Ingredients

  • 1 cup chickpea flour
  • 1/4 cup cornstarch
  • 1/4 tsp. baking powder
  • 1 tsp. cumin seeds
  • 1/4 tsp. cayenne pepper
  • Salt to taste
  • 1/2 onion, diced
  • 1 cup canned chickpeas, drained, rinsed & chopped
  • 1, 10 oz. package frozen spinach, thawed, squeezed dry & chopped

Instructions

  1. Preheat the oven to 350°F and set aside a baking sheet lined with parchment paper.
  2. In a medium bowl, whisk together the dry ingredients-chickpea flour, cornstarch, baking powder, cumin seeds, cayenne pepper and salt.
  3. Next add the onion, chickpeas, spinach, and ginger to the dry ingredients and mix thoroughly.
  4. Scoop out heaping tablespoons of the mixture and place on the baking sheet. Flatten each scoop with a fork and bake for 12-15 minutes, flip patties and bake an additional 8-10 or until golden. Remove from oven and serve with fruit chutney or a yogurt sauce.
