Crispy Spinach and Chickpea Fritters
Yields 6 servings
Ingredients
- 1 cup chickpea flour
- 1/4 cup cornstarch
- 1/4 tsp. baking powder
- 1 tsp. cumin seeds
- 1/4 tsp. cayenne pepper
- Salt to taste
- 1/2 onion, diced
- 1 cup canned chickpeas, drained, rinsed & chopped
- 1, 10 oz. package frozen spinach, thawed, squeezed dry & chopped
Instructions
- Preheat the oven to 350°F and set aside a baking sheet lined with parchment paper.
- In a medium bowl, whisk together the dry ingredients-chickpea flour, cornstarch, baking powder, cumin seeds, cayenne pepper and salt.
- Next add the onion, chickpeas, spinach, and ginger to the dry ingredients and mix thoroughly.
- Scoop out heaping tablespoons of the mixture and place on the baking sheet. Flatten each scoop with a fork and bake for 12-15 minutes, flip patties and bake an additional 8-10 or until golden. Remove from oven and serve with fruit chutney or a yogurt sauce.
