Crustless Swiss Chard Quiche

Yields 8 servings

Ingredients

  • 1 tsp. olive oil
  • 1/2 onion, diced
  • 1/2 bunch of Swiss chard
  • 2 1/2 cups cheese, shredded
  • 4 eggs
  • 1 cup milk
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F. Set aside a pie dish oiled with cooking spray.
  2. Wash Swiss chard leaves and cut off ends of the stem. Chopped leaves and stems.
  3. Add the onion and the chard to the oil and sauté until tender. Add salt and pepper to taste.
  4. Whisk the eggs, then add the milk and shredded cheese. Fold in the chard mixture and pour into the pie dish.
  5. Bake for 35-45 minutes or until golden brown. Serve immediately.
