Edamame Salad

Yields 8 servings

Ingredients

  • 1 lb. shelled edamame, frozen
  • 3 cups corn kernels, canned or frozen
  • 1 cup bell peppers, chopped
  • 3/4 cup green onion, sliced
  • 1/2 cup red onion, diced
  • 1/4 cup fresh parsley, chopped
  • 2 Tbsp. fresh marjoram or basil, diced
  • 1/3 cup fresh lemon juice
  • 2 Tbsp. Dijon mustard
  • 2 Tbsp. olive oil
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper

Instructions

  1. Add the edamame to boiling water for 4-5 minutes, then drain and rinse with cold water.
  2. In a large bowl, whisk the lemon juice, mustard, olive oil, salt and pepper.
  3. Add the edamame, corn, red bell pepper, green and red onion, parsley and fresh herbs to the dressing and toss until thoroughly coated. Refrigerate until ready to serve.
