Flaxseed Meal Pancakes

Serving size: 4 servings


  • 1 cup flaxseed, ground
  • 4 eggs, beaten
  • 1/3 cup unsweetened dairy-free milk
  • 1 tbsp. lemon juice
  • 1 tsp. baking soda
  • 1 tsp. vanilla extract
  • 1 tsp. cinnamon
  • 1/16 tsp. salt


  1. In a bowl, mix all ingredients together. If the mixture is too thick, add more dairy-free milk or water, batter will be sticky.
  2. Preheat a skillet over medium heat, spray with cooking spray. Pour 1/4 cup of the batter and lightly spread out the batter with a spoon. Let cook 2-3 minutes on each side or until the edges begin to firm and the bubbles begin to burst.
  3. Top with your favorite nut butter, syrup and fruit.
