Garlic Lentils with Kale

Yields 12 servings

Ingredients

  • 2 Tbsp. olive oil
  • 1 large onion, diced
  • 1, 8 oz. package of dry lentils, rinsed & sorted
  • Water
  • 1, 6 oz. can tomato paste
  • 3 cloves garlic, minced
  • 1 Tbsp. brown sugar
  • 1 Tbsp. paprika
  • 1 bunch of kale, chopped
  • Salt and pepper to taste

Instructions

  1. Sauté the onion in olive oil over medium heat in a large sauce pan until soft, about 10 minutes. Add the lentils and enough water to cover the lentils by 2 inches. Bring the water to a boil, then reduce heat to medium-low and cook until lentils are soft, about 15-20 minutes depending on lentil type.
  2. Add the tomato paste, garlic, brown sugar and paprika and combine with the lentil mixture. Then add the kale. Reduce heat to low and cook until kale is tender around 10-15 minutes. Season with salt and pepper and serve.
