Gluten-free Blackberry Apple Cobbler

Ingredients

  • FRUIT FILLING INGREDIENTS:
  • 4 cups blackberries, fresh or frozen
  • 4 medium apples, peeled and diced
  • ¼ cup cane sugar
  • ¼ cup brown sugar
  • 2 tbsp. orange juice or water
  • 2 tbsp. cornstarch or other starch
  • 1 tsp. ground cinnamon
  • BISCUIT TOPPING INGREDIENTS:
  • 1 cup gluten-free flour blend of choice
  • ¼ cup almond flour
  • ¼ cup brown sugar
  • 2 tsp. baking powder
  • ½ tsp. baking soda
  • ¼ tsp. sea salt
  • 4 tbsp. butter or dairy-free shortening, cold
  • ½ cup milk or unsweetened dairy-free milk
  • 1 tsp. vinegar
  • ½ tsp. pure vanilla extract

Instructions

  1. Preheat oven to 350°F. Set aside an 8x8 inch baking dish.
  2. Fruit filling: In a large bowl, add blackberries, apples, sugar, brown sugar, orange juice, starch and cinnamon. Toss until just combined and pour filling into the baking dish.
  3. Biscuit topping: In a medium bowl sift flour, almond flour, brown sugar, baking powder, baking soda and salt. Mix well.
  4. Add cold butter to flour mixture and cut butter with a pastry blender until mixture resembles a coarse meal.
  5. In a different bowl, mix milk, vinegar and vanilla. Add liquid mixture to the flour blend and stir until just combined.
  6. Scoop out biscuit mixture, flatten dough a bit with your hand and place evenly on top of the berry mixture.
  7. Bake for 45-50 minutes or until dough is golden brown and fruit is bubbling. If you used frozen berries, you may need to bake 5-10 minutes longer. When done, remove from the oven and let cool. Serve warm and enjoy!
