Gluten-free Blackberry Apple Cobbler

Ingredients
- FRUIT FILLING INGREDIENTS:
- 4 cups blackberries, fresh or frozen
- 4 medium apples, peeled and diced
- ¼ cup cane sugar
- ¼ cup brown sugar
- 2 tbsp. orange juice or water
- 2 tbsp. cornstarch or other starch
- 1 tsp. ground cinnamon
- BISCUIT TOPPING INGREDIENTS:
- 1 cup gluten-free flour blend of choice
- ¼ cup almond flour
- ¼ cup brown sugar
- 2 tsp. baking powder
- ½ tsp. baking soda
- ¼ tsp. sea salt
- 4 tbsp. butter or dairy-free shortening, cold
- ½ cup milk or unsweetened dairy-free milk
- 1 tsp. vinegar
- ½ tsp. pure vanilla extract
Instructions
- Preheat oven to 350°F. Set aside an 8x8 inch baking dish.
- Fruit filling: In a large bowl, add blackberries, apples, sugar, brown sugar, orange juice, starch and cinnamon. Toss until just combined and pour filling into the baking dish.
- Biscuit topping: In a medium bowl sift flour, almond flour, brown sugar, baking powder, baking soda and salt. Mix well.
- Add cold butter to flour mixture and cut butter with a pastry blender until mixture resembles a coarse meal.
- In a different bowl, mix milk, vinegar and vanilla. Add liquid mixture to the flour blend and stir until just combined.
- Scoop out biscuit mixture, flatten dough a bit with your hand and place evenly on top of the berry mixture.
- Bake for 45-50 minutes or until dough is golden brown and fruit is bubbling. If you used frozen berries, you may need to bake 5-10 minutes longer. When done, remove from the oven and let cool. Serve warm and enjoy!
