Green Bean Tomato Salad

Yields 4 servings

Ingredients

  • 1 lb. string beans, washed & trimmed
  • 6 ripe tomatoes, cored & cut into wedges
  • 1 Tbsp. Dijon mustard
  • 2 Tbsp. red-wine vinegar
  • 4 Tbsp. shallots or green onions, finely chopped
  • 1 Tbsp. garlic, minced
  • 4 Tbsp. extra virgin olive oil
  • Salt and pepper to taste
  • 4 Tbsp. basil, chopped

Instructions

  1. Bring salted water to a boil in a large saucepan. Add the green beans and cook for 3-5 minutes or until tender crisp. Drain water and let cool.
  2. In a serving bowl, combine the mustard, vinegar, shallots, garlic, oil, salt and pepper, then blend with a whisk. Add the beans and tomato wedges and toss. Sprinkle with basil and serve.
