Green Beans with Ginger Garlic Sauce

Yields 5 servings

Ingredients

  • 1 1/4 lbs. green beans, fresh, trimmed
  • 2 Tbsp. olive oil
  • 1/8 cup ginger, fresh, grated
  • 2 garlic cloves, minced

Instructions

  1. Once the green beans are washed and trimmed, add them to a large pot of boiling water. Set aside a large bowl containing ice water. Boil for 4 minutes, then remove the beans from the boiling water and place them in the ice water. Remove the beans instantly from the ice water and place them in a colander to drain.
  2. Heat a large skillet on medium-high heat. Add the olive oil to the skillet along with the ginger, garlic, and green beans. Sauté until the beans are thoroughly heated. Place in a serving dish and sprinkle with salt, then serve immediately.
