Herb Salad with Pomegranate & Pistachio

Yields 4 servings

Ingredients

  • Juice of one orange
  • 3 Tbsp. red wine vinegar
  • 1 Tbsp. honey
  • 1/2 cup fresh dill leaves, chopped
  • 1/2 cup fresh mint leaves, chopped
  • 5 oz. mixed salad greens
  • 1 bunch green onions, diced
  • Seeds of 1 pomegranate

Instructions

  1. In a small bowl, whisk the orange juice, vinegar, and honey. In a large bowl, toss the mixed greens, dill, mint, green onions and pomegranate seeds. Pour the dressing over the salad and combine. Serve immediately.
