Honey Balsamic Glazed Brussels Sprouts

Yields 4 servings

Ingredients

  • 1 lb. Brussels sprouts, cleaned and halved
  • 2 Tbsp. extra-virgin olive oil
  • 1/2 cup balsamic vinegar
  • 2 Tbsp. honey
  • 1 Tbsp. Dijon mustard
  • 2 garlic cloves, minced
  • Salt and pepper to taste

Instructions

  1. Heat oil in a large skillet over medium heat. Add the Brussels sprouts, cut side down, and cook for 3-4 minutes until golden on the bottom.
  2. Next add 1/4 cup water and cover. Steam the Brussels sprouts until tender, an additional 3 minutes. If skillet becomes dry, add 1 tablespoon water at a time until thoroughly cooked.
  3. While Brussels sprouts are cooking, add the vinegar, honey, mustard, and garlic together and whisk in a small saucepan. Bring the mixture to a simmer and cook until thick, around 6-8 minutes. Pour sauce over Brussels sprouts and toss. Heat an additional 2-3 minutes and season with salt and pepper. Serve immediately.
