Indian Spiced Swiss Chard
Yields 4 servings
Ingredients
- 1 1/2 tsp. coriander, ground
- 1 tsp. cumin, ground
- 1 green cardamon pod, seeds only
- 1/2 tsp. turmeric, ground
- 1 pinch cayenne, ground
- 1 large onion, diced
- 2 Tbsp. fresh ginger, diced
- 3-4 cloves of garlic, diced
- 3 large tomatoes, chopped
- 1 Tbsp. tomato paste
- Dash of salt
- 1 bunch chard stems, chopped into 1/2-inch pieces
- 1 bunch chard leaves, rolled and cut into thin strips
Instructions
- In a dry hot pan, toast the cumin, coriander, and cardamon. Toss the seasonings in the pan until the pods begin to toast. Remove from heat and let cool. Then grind in a spice grinder or by using a mortar and pestle.
- In a large skillet with a fitted lid, heat the oil over medium low heat. Add the onion and stir, cook until the onion is translucent, about 20 minutes.
- Add the ginger and garlic and mix, then cook for 60 seconds.
- Increase the heat to medium then add tomatoes, tomato paste, and the spice mixture. Cover with the lid and let simmer for 10 minutes or until tomatoes break apart easily.
- Add the chard stems and simmer until tender, then add the chard leaves and simmer covered until leaves are wilted. Add salt to taste and serve over our favorite grain.
