Indian Spiced Swiss Chard

Yields 4 servings

Ingredients

  • 1 1/2 tsp. coriander, ground
  • 1 tsp. cumin, ground
  • 1 green cardamon pod, seeds only
  • 1/2 tsp. turmeric, ground
  • 1 pinch cayenne, ground
  • 1 large onion, diced
  • 2 Tbsp. fresh ginger, diced
  • 3-4 cloves of garlic, diced
  • 3 large tomatoes, chopped
  • 1 Tbsp. tomato paste
  • Dash of salt
  • 1 bunch chard stems, chopped into 1/2-inch pieces
  • 1 bunch chard leaves, rolled and cut into thin strips

Instructions

  1. In a dry hot pan, toast the cumin, coriander, and cardamon. Toss the seasonings in the pan until the pods begin to toast. Remove from heat and let cool. Then grind in a spice grinder or by using a mortar and pestle.
  2. In a large skillet with a fitted lid, heat the oil over medium low heat. Add the onion and stir, cook until the onion is translucent, about 20 minutes.
  3. Add the ginger and garlic and mix, then cook for 60 seconds.
  4. Increase the heat to medium then add tomatoes, tomato paste, and the spice mixture. Cover with the lid and let simmer for 10 minutes or until tomatoes break apart easily.
  5. Add the chard stems and simmer until tender, then add the chard leaves and simmer covered until leaves are wilted. Add salt to taste and serve over our favorite grain.
