Indian Spinach

Yields 6 servings

Ingredients

  • 1 medium onion, chopped
  • 2 Tbsp. olive oil
  • 6 garlic cloves, chopped
  • 2 tsp. fresh ginger, minced
  • 1/2 tsp. coriander, ground
  • 1/2 tsp. turmeric, ground
  • 1/2 tsp. cayenne, ground
  • 1/2 tsp. garam masala, ground
  • 1/8 tsp. cardamom, ground
  • 2 lbs. spinach leaves, chopped
  • 1 cup plain low-fat Greek yogurt
  • 1 tsp. salt

Instructions

  1. Sauté the onion in olive oil over medium heat in a large sauce pan until soft ─ about 10 minutes. Add the garlic and cook for an additional 2 minutes. Add the ginger and spices and cook for 1 more minute or until fragrant.
  2. Stir in the spinach and cook until wilted, around 5 minutes. Remove from heat and stir in the yogurt and salt. Serve with rice and naan.
