Indian Spinach
Yields 6 servings
Ingredients
- 1 medium onion, chopped
- 2 Tbsp. olive oil
- 6 garlic cloves, chopped
- 2 tsp. fresh ginger, minced
- 1/2 tsp. coriander, ground
- 1/2 tsp. turmeric, ground
- 1/2 tsp. cayenne, ground
- 1/2 tsp. garam masala, ground
- 1/8 tsp. cardamom, ground
- 2 lbs. spinach leaves, chopped
- 1 cup plain low-fat Greek yogurt
- 1 tsp. salt
Instructions
- Sauté the onion in olive oil over medium heat in a large sauce pan until soft ─ about 10 minutes. Add the garlic and cook for an additional 2 minutes. Add the ginger and spices and cook for 1 more minute or until fragrant.
- Stir in the spinach and cook until wilted, around 5 minutes. Remove from heat and stir in the yogurt and salt. Serve with rice and naan.
