Kohlrabi Apple Mint Slaw
Yields 4 servings
Ingredients
- 3 1/2 cups kohlrabi, peeled & julienned
- 4 tsp. fresh lime juice
- 1 tsp. lime zest
- 1 Tbsp. Fresno chile, thinly slice
- 2 Tbsp. extra virgin olive oil
- Salt to taste
- 1 1/2 cups Fuji apple, julienned
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup cilantro leaves, chopped
Instructions
- Soak the julienned kohlrabi in ice water until crisp, around 10 minutes. Drain and set aside.
- In a medium bowl, whisk together the lime juice, lime zest, chili, and oil. Season with salt. Next toss in the kohlrabi, apple and herbs. Adjust seasonings if desired then serve.
