Kohlrabi Apple Mint Slaw

Yields 4 servings

Ingredients

  • 3 1/2 cups kohlrabi, peeled & julienned
  • 4 tsp. fresh lime juice
  • 1 tsp. lime zest
  • 1 Tbsp. Fresno chile, thinly slice
  • 2 Tbsp. extra virgin olive oil
  • Salt to taste
  • 1 1/2 cups Fuji apple, julienned
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup cilantro leaves, chopped

Instructions

  1. Soak the julienned kohlrabi in ice water until crisp, around 10 minutes. Drain and set aside.
  2. In a medium bowl, whisk together the lime juice, lime zest, chili, and oil. Season with salt. Next toss in the kohlrabi, apple and herbs. Adjust seasonings if desired then serve.
