Lemon Blueberry Biscuits
Yields 12 servings
Ingredients
- 2 cups all-purpose flour or gluten-free substitute
- 1/2 cup sugar
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 cup lemon yogurt
- 1 large egg, room temperature
- 1/4 cup butter, melted
- 1 tsp. lemon zest
- 1 cup blueberries, fresh or frozen
- Glaze:
- 1/2 cup confectioners’ sugar
- 1 Tbsp. lemon juice, fresh
- 1/2 tsp. lemon zest
Instructions
- Preheat the oven to 400°.
- Using a large bowl, combine the flour, sugar, baking powder, baking soda and salt.
- In a separate bowl, whisk the yogurt, egg, melted butter, and lemon zest until thoroughly combined.
- Add the flour mixture to the wet mixture and combine until just moistened. Then fold in the blueberries.
- Drop 1/3 cup of the batter on a greased baking sheet, spacing biscuits by 1 inch. Bake for 15-18 minutes or until light brown.
- Using a small bowl, combine the glaze ingredients until smooth then drizzle onto the warm biscuits.
