Lemon Turmeric Quinoa

Serving size: 4 servings

Ingredients

  • 1 cup quinoa, uncooked
  • 1 tsp. coconut oil
  • 1 1/2 tsp. turmeric powder
  • 1 tbsp. lemon juice
  • 2 cups water
  • 1 tsp. lemon zest
  • 1/4-1/2 tsp. salt

Instructions

  1. Rinse and drain quinoa using a fine mesh colander. In a medium saucepan, bring 2 cups of water, quinoa and 1/2 teaspoon of salt to a boil. Reduce heat, cover and simmer for 15-20 minutes or until water is absorbed. Let sit for 5 minutes covered.
  2. Fluff quinoa with a fork and add remaining ingredients. Stir to combine. Adjust seasonings to taste. Enjoy with your favorite protein.
