Lentil Brownies

Yields 9 servings

Ingredients

  • Nonstick cooking spray
  • 1/2 cup dry brown lentils
  • 1 cup rolled oats
  • 1/4 cup cocoa powder
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 cup applesauce
  • 1/3 cup honey
  • 1/4 cup creamy almond butter or other nut butter
  • 2 tsp. vanilla extract
  • 1 egg
  • 1 1/4 cups semisweet chocolate chips

Instructions

  1. Preheat the oven to 350°F. Set aside an 8x8 baking dish and spray with cooking spray.
  2. Bring lentils and one cup water to a boil. Cover, reduce heat to simmer and let cook until lentils are tender, around 15-20 minutes. Remove from heat and set aside.
  3. In a food processor, add the oats, cocoa powder, baking powder, baking soda and salt. Pulse until a fine powder.
  4. Add the cooked lentils with any remaining water to the food processor along with the applesauce, honey, almond butter, vanilla and egg. Pulse until you have a smooth batter. Fold 1 cup of chocolate chips into the batter.
  5. Pour the batter into the prepared baking dish. Using a spatula, spread the batter out evenly and sprinkle the remaining chocolate chip on the top. Bake for 25 minutes, remove from oven and let cool for 15 minutes prior to cutting.
