Lentil Burgers

Serving size: 8 servings

Ingredients

  • 1 cup dry lentils, rinsed
  • 2 1⁄2 cups water
  • 1⁄2 tsp. salt
  • 1 tbsp. olive oil
  • 1⁄2 medium onion, diced
  • 1 carrot, diced
  • 1 tsp. pepper
  • 1 tbsp. gluten-free reduced sodium soy sauce
  • 3⁄4 cup rolled oats, finely ground
  • 3⁄4 cup rolled oats, finely ground 3⁄4 cup gluten-free breadcrumbs

Instructions

  1. Preheat oven to 375°F and set aside baking sheet.
  2. In a medium saucepan, bring lentils to boil with water, reduce heat to simmer and cook 15-20 minutes or until lentils are soft and most of the water is absorbed. Drain water if needed. Season lentils with salt after cooking.
  3. In a frying pan, sauté onions and carrot in oil until soft, about 5 minutes.
  4. In a bowl mix cooked lentils and vegetables, add pepper, soy sauce, ground oats and breadcrumbs. Mix well and form patties.
  5. Bake patties in the preheated oven for 15-20 minutes. Flip patties at 10 minutes.
  6. Serve with your favorite dressing on a bed of lettuce.
