Lentil Burgers
Serving size: 8 servings
Ingredients
- 1 cup dry lentils, rinsed
- 2 1⁄2 cups water
- 1⁄2 tsp. salt
- 1 tbsp. olive oil
- 1⁄2 medium onion, diced
- 1 carrot, diced
- 1 tsp. pepper
- 1 tbsp. gluten-free reduced sodium soy sauce
- 3⁄4 cup rolled oats, finely ground
- 3⁄4 cup rolled oats, finely ground 3⁄4 cup gluten-free breadcrumbs
Instructions
- Preheat oven to 375°F and set aside baking sheet.
- In a medium saucepan, bring lentils to boil with water, reduce heat to simmer and cook 15-20 minutes or until lentils are soft and most of the water is absorbed. Drain water if needed. Season lentils with salt after cooking.
- In a frying pan, sauté onions and carrot in oil until soft, about 5 minutes.
- In a bowl mix cooked lentils and vegetables, add pepper, soy sauce, ground oats and breadcrumbs. Mix well and form patties.
- Bake patties in the preheated oven for 15-20 minutes. Flip patties at 10 minutes.
- Serve with your favorite dressing on a bed of lettuce.
