Lentil Tabbouleh
Yields 4 servings
Ingredients
- 1 cup green lentils
- 1 bunch of green onions, sliced
- 1 cup cherry tomatoes, sliced in half
- 1 bunch fresh flat leaf parsley, finely chopped
- 1 bunch fresh mint, finely chopped
- 4 Tbsp. extra virgin olive oil
- 1 fresh lemon
- Salt and pepper to taste
Instructions
- Rinse the lentils in a colander and remove any debris. Bring the lentils and 2 cups of salted water to a boil, cover and reduce heat to simmer. Cook for 20-25 minutes or until lentils are tender but not mushy. Drain excess water and set aside to cool.
- Mix together the cooled lentils, green onions, tomatoes, parsley, mint and olive oil. Add lemon juice to taste and season with salt and pepper then serve.
