Lentils with Watercress
Yields 4 servings
Ingredients
- 1 cup dried green lentils
- 2 cloves garlic
- 1 bunch watercress, chopped
- 2 scallions, sliced
- 2 tbsp. red wine vinegar
- Salt and pepper to taste
- 1 tbsp. olive oil
Instructions
- Cook lentils as directed on the label directions. Add the garlic cloves to the lentil water. Once lentils are cooked, drain water and remove garlic cloves.
- Toss lentils with watercress, scallions, and red wine vinegar. Season with salt, pepper and 1 tablespoon olive oil. Toss and serve.
