Lentils with Watercress

Yields 4 servings

Ingredients

  • 1 cup dried green lentils
  • 2 cloves garlic
  • 1 bunch watercress, chopped
  • 2 scallions, sliced
  • 2 tbsp. red wine vinegar
  • Salt and pepper to taste
  • 1 tbsp. olive oil

Instructions

  1. Cook lentils as directed on the label directions. Add the garlic cloves to the lentil water. Once lentils are cooked, drain water and remove garlic cloves.
  2. Toss lentils with watercress, scallions, and red wine vinegar. Season with salt, pepper and 1 tablespoon olive oil. Toss and serve.
