Loaded Broccoli Avocado Salad

Yields 4 servings

Ingredients

  • 4 cups broccoli florets, cut into bite-sized pieces
  • 2 Tbsp. red onion, minced
  • 1/4 cup cheddar cheese, shredded
  • 1/4 cup cooked bacon, chopped
  • 2 large avocados, ripe, peeled and pitted
  • 1/2 cup ranch dressing
  • 1/4 of small red onion, peeled and sliced

Instructions

  1. Mix together the broccoli, minced onions, cheese and bacon in a large bowl and set aside.
  2. Set aside one avocado half. Mash the remaining avocado flesh in a medium bowl. Add the dressing and mix, then add to the broccoli mixture and mix until combined.
  3. Cut the reserved avocado half into slices. Add the avocado slices and red onion slices on top of the salad and serve immediately.

Nutrition per serving: 160 calories, 18 g carbohydrates, 10 mg cholesterol, 8 g fat, 4 g fiber, 6 g protein, 550 mg sodium, 3 g sugar.
