Mandarin Broccoli Salad

Yields 9 servings

Ingredients

  • 3/4 cup mayo
  • 1/4 cup sugar
  • 4 tsp. apple cider vinegar
  • 4 cups fresh broccoli florets
  • 1 small red onion, sliced thin
  • 1/2 cup raisins
  • 1/2 cup pecan halves, toasted
  • 1, 11 oz. can mandarin oranges, canned in juice & drained

Instructions

  1. In a bowl, whisk together the mayo, sugar, apple cider vinegar and set aside.
  2. In a serving bowl, combine the broccoli, onion, raisins, and pecans. Mix in the dressing and then gently stir in the mandarins. Cover and refrigerate for 3 hours prior to serving.

Nutrition per serving: 190 calories, 20 g carbohydrates, 5 mg cholesterol, 12 g fat, 2 g fiber, 2 g protein, 75 mg sodium, 15 g sugar.
