Marinated Cauliflower Salad

Yields 6 servings

Ingredients

  • 1/4 cup red wine vinegar
  • 1/4 cup oil
  • 2 Tbsp. water
  • 5 cups cauliflower, cut into bit size pieces
  • 1 bay leaf
  • 1 garlic clove, minced
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 1 medium carrot, shredded
  • 1 small red onion, diced
  • 1/4 cup fresh parsley, diced
  • 1/4 tsp. dried basil

Instructions

  1. In a small saucepan, bring the vinegar, oil and water just to a boil then remove from heat.
  2. In the meantime, place the cauliflower, bay leaf, garlic, salt and pepper in a heat proof bowl. Pour the vinegar mixture over the ingredients and toss. Refrigerate, covered, for a minimum of 6 hours or overnight. Stir mixture occasionally.
  3. Remove from refrigerator and add the carrot, onion, parsley, and basil. Toss ingredients and refrigerate an additional two hours. Discard bay leaf and serve.
