Marinated Cauliflower Salad
Yields 6 servings
Ingredients
- 1/4 cup red wine vinegar
- 1/4 cup oil
- 2 Tbsp. water
- 5 cups cauliflower, cut into bit size pieces
- 1 bay leaf
- 1 garlic clove, minced
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- 1 medium carrot, shredded
- 1 small red onion, diced
- 1/4 cup fresh parsley, diced
- 1/4 tsp. dried basil
Instructions
- In a small saucepan, bring the vinegar, oil and water just to a boil then remove from heat.
- In the meantime, place the cauliflower, bay leaf, garlic, salt and pepper in a heat proof bowl. Pour the vinegar mixture over the ingredients and toss. Refrigerate, covered, for a minimum of 6 hours or overnight. Stir mixture occasionally.
- Remove from refrigerator and add the carrot, onion, parsley, and basil. Toss ingredients and refrigerate an additional two hours. Discard bay leaf and serve.
