Mushroom Veggie Burger
Yields 10 servings
Ingredients
- 1/2 cup shiitake mushrooms, fresh
- 1 Tbsp. olive oil
- 2 cups of cooked barley
- 2 cup white beans, cooked
- 1 tsp. onion powder
- 1 tsp. garlic powder
- 2 Tbsp. nutritional yeast
- 1 Tbsp. pickle juice
- 1 Tbsp. Italian seasoning
- 1 tsp. sea salt
- 1 tsp. pepper
Instructions
- Preheat the oven to 400°F and set aside a baking sheet covered with parchment paper.
- Slice the shiitake mushrooms and sauté for 10 minutes in olive oil.
- In a food processor, combine the beans, barley and cooked mushrooms. Pulse until mixture creates a thick crumb like texture. Pour the mixture in a mixing bowl.
- Add the remaining ingredients into the crumb mixture and combine with your hands until ingredients are fully incorporated.
- Make 10 patties and place them on the baking sheet. Bake for 30 minutes or until brown. Serve with your favorite condiments on a bun.
