No Bake Cocoa & Hemp Truffles

Yields 8 servings

Ingredients

  • 1/4 cup cocoa powder
  • 1/4 cup hemp hearts
  • 3 Tbsp. coconut oil
  • 5-6 pitted dates
  • 2 Tbsp. cocoa powder for rolling
  • 1 tsp. vanilla extract
  • 1 tsp. cinnamon
  • 1/8 tsp. salt

Instructions

  1. Set aside a baking sheet lined with parchment paper.
  2. Melt the coconut oil in the microwave.
  3. Combine the melted coconut oil, 1/8 cup of hemp hearts, and dates to a food processor and pulse until smooth.
  4. Add the vanilla, salt, cinnamon, and 1/4 cup of the cocoa powder, then pulse again to combine.
  5. Use a spoon to scoop out the paste and form into a ball.
  6. In a dish, mix the remaining cocoa powder and hemp seeds. Roll each ball in the mixture and place on the baking sheet
  7. Place in the freezer for 10-15 minutes or until they harden. Serve at room temperature. Store for up to one week in the refrigerator or up to 3 months in the freezer.
