Parmesan Butternut Squash Gratin
Yields 6 servings
Ingredients
- 1 butternut squash
- 1/4 cup butter
- 2 large garlic cloves, minced
- 1/4 cup panko bread crumbs
- 1/3 cup Parmesan cheese
- 1/4 tsp. salt
- 1/8 tsp. black pepper
- 1/4 cup parsley, fresh
Instructions
- Preheat the oven to 375°F. Set aside an oiled 13x9 baking dish.
- Peel, halve and seed the butternut squash. Cut each half into 1/2 inch thick slices. Place the slices so they overlap in the baking dish.
- Melt the butter in a saucepan. Once melted, add the minced garlic and combine. Cook for 2-3 minutes or until garlic is fragrant. Remove from heat.
- Mix the bread crumbs, cheese, and 1 tablespoon of the butter mixture together.
- Brush the remaining butter mixture onto the squash slices and season with salt and pepper, then add the remaining bread crumb mixture on top of the squash.
- Bake uncovered for 30-40 minutes or until squash is tender. Then increase the temperature to 425°F and bake an additional 5-10 minutes or until lightly browned. Serve with parsley.
