Parmesan Butternut Squash Gratin

Yields 6 servings

Ingredients

  • 1 butternut squash
  • 1/4 cup butter
  • 2 large garlic cloves, minced
  • 1/4 cup panko bread crumbs
  • 1/3 cup Parmesan cheese
  • 1/4 tsp. salt
  • 1/8 tsp. black pepper
  • 1/4 cup parsley, fresh

Instructions

  1. Preheat the oven to 375°F. Set aside an oiled 13x9 baking dish.
  2. Peel, halve and seed the butternut squash. Cut each half into 1/2 inch thick slices. Place the slices so they overlap in the baking dish.
  3. Melt the butter in a saucepan. Once melted, add the minced garlic and combine. Cook for 2-3 minutes or until garlic is fragrant. Remove from heat.
  4. Mix the bread crumbs, cheese, and 1 tablespoon of the butter mixture together.
  5. Brush the remaining butter mixture onto the squash slices and season with salt and pepper, then add the remaining bread crumb mixture on top of the squash.
  6. Bake uncovered for 30-40 minutes or until squash is tender. Then increase the temperature to 425°F and bake an additional 5-10 minutes or until lightly browned. Serve with parsley.
