Puffed Amaranth Squares

Yields 16 servings

Ingredients

  • 1/2 cup nut or seed butter
  • 1/2 cup honey
  • 1/2 tsp. salt
  • 1 tsp. vanilla extract
  • 3 1/2 cups puffed amaranth cereal
  • 1/2 cup dried mixed fruit, chopped

Instructions

  1. Set aside a greased 8x8 inch baking dish.
  2. In a large saucepan over medium-high heat, combine the nut or seed butter, honey and salt. Stir consistently, once at a boil add vanilla and remove from heat.
  3. Add the puffed amaranth and dried fruit to the saucepan and combine. Press the mixture into the greased baking dish evenly. Refrigerate for one hour, then cut into 16 even pieces and enjoy!
