Red Lentil Hummus
Yields 4 servings
Ingredients
- 1 cup dried red lentils
- 2 cups water
- 2 garlic cloves, minced
- 1/2 lemon peel
- 2 Tbsp. extra virgin olive oil
- 1 1/2 Tbsp. tahini paste
- Juice of 1 lemon
- Salt to taste
- 2 pinches sumac
- Serve with carrots, cucumbers, pita chips, etc.
Instructions
- Rinse the lentils in a colander and remove any debris. Place lentils in a saucepan with water and 1/2 lemon peel. Bring to a boil, reduce heat to simmer and cook for 15-20 minutes or until lentils are tender. Drain and set aside to cool.
- In a food processor add the cooled lentils, garlic cloves, oil, tahini, lemon juice, salt and sumac. Pulse until smooth. Add water 1 teaspoon at a time if too thick. Taste and adjust seasonings as desired and serve.
