Red Lentil Hummus

Yields 4 servings

Ingredients

  • 1 cup dried red lentils
  • 2 cups water
  • 2 garlic cloves, minced
  • 1/2 lemon peel
  • 2 Tbsp. extra virgin olive oil
  • 1 1/2 Tbsp. tahini paste
  • Juice of 1 lemon
  • Salt to taste
  • 2 pinches sumac
  • Serve with carrots, cucumbers, pita chips, etc.

Instructions

  1. Rinse the lentils in a colander and remove any debris. Place lentils in a saucepan with water and 1/2 lemon peel. Bring to a boil, reduce heat to simmer and cook for 15-20 minutes or until lentils are tender. Drain and set aside to cool.
  2. In a food processor add the cooled lentils, garlic cloves, oil, tahini, lemon juice, salt and sumac. Pulse until smooth. Add water 1 teaspoon at a time if too thick. Taste and adjust seasonings as desired and serve.

Nutrition per serving: 270 calories, 30 g carbohydrates, 11 g fat, 7 g fiber, 14 g protein, 160 mg sodium, 1 g sugar.
