Roasted Cabbage Wedges

Yields 6 servings

Ingredients

  • 1 Tbsp. plus 2 more Tbsp. extra-virgin olive oil
  • 1 medium head cabbage, cut into 1 inch thick rounds
  • Salt and pepper to taste
  • 1 tsp. caraway or fennel seeds

Instructions

  1. Preheat the oven to 400°F. Brush a rimmed baking sheet with 1 tablespoon oil. Place the 1 inch cabbage rounds in single layers and brush them with remaining oil.
  2. Season with salt, pepper and caraway or fennel seeds. Roast until cabbage is tender and golden, about 40-45 minutes. Serve immediately.
