Roasted Kohlrabi with Parmesan

Yields 4 servings

Ingredients

  • 6 kohlrabi, peeled & cut into 1 inch wedges
  • 2 Tbsp. olive oil
  • 1/2 tsp. salt
  • Pinch of cayenne
  • 3 Tbsp. Parmesan, grated
  • 1 Tbsp. fresh parsley, chopped

Instructions

  1. Preheat the oven to 450°F. Set aside a rimmed baking sheet.
  2. Toss the kohlrabi with olive oil, salt and cayenne. Place on a baking sheet in a single layer.
  3. Roast for 30 minutes or until soft. Stir the kohlrabi every 10 minutes for even baking. Remove from oven and add the Parmesan and parsley, then serve.
