Roasted Potatoes and Asparagus with Parmesan

Yields 4 servings

Ingredients

  • 1 lb. asparagus, cut into 1 inch pieces
  • 1 lb. Yukon Gold potatoes, cut into 1 inch pieces
  • 3 Tbsp. olive oil
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/3 cup Parmesan, grated

Instructions

  1. Preheat the oven to 450°F. Set aside a baking sheet.
  2. Toss the asparagus, potatoes, olive oil, and salt and pepper together, then spread ingredients evenly on the baking sheet.
  3. Roast for 20 minutes or until soft, stirring once. Remove from oven and sprinkle with Parmesan, then return to oven until cheese is melted and golden, around 2-3 minutes more. Serve immediately.
