Sautéed Pasta with Broccoli

Yields 4 servings

Ingredients

  • 1/3 cup extra-virgin olive oil
  • 2 garlic cloves, smashed
  • 1/4 tsp. red pepper flakes
  • 1/4 head broccoli, sliced thin, stalk peeled and cut into matchsticks
  • Salt and pepper to taste
  • 2 Tbsp. red wine vinegar
  • 1-2 Tbsp. water, if needed
  • 2 cups penne pasta, cooked al dente
  • Parmesan cheese as a garnish

Instructions

  1. In a large skillet, add the olive oil, garlic and red pepper flakes and heat over medium heat until the garlic is golden in color. Remove the smashed garlic and add the broccoli to the pan.
  2. Coat the broccoli with the oil and season with salt and pepper. Sauté over medium heat for about 5 minutes or until broccoli is slightly soft.
  3. Turn the heat to high and add the red wine vinegar to deglaze the pan. Add 1-2 tablespoons of water if needed.
  4. Add the cooked pasta and toss with the broccoli. Serve with freshly grated parmesan.
