Shredded Gingered Brussels Sprouts

Ingredients
- 1 lb. Brussels sprouts, fresh
- 1 Tbsp. olive oil
- 1 small onion, diced
- 1 Tbsp. fresh gingerroot, minced
- 1 garlic clove, minced
- 1/2 tsp. salt
- 2 Tbsp. water
- 1/4 tsp. pepper
Instructions
- Wash and trim off the base of the Brussel sprouts. Cut in half, lengthwise, then cut into thin slices.
- Using a large cast iron pan or skillet, heat over medium-high heat. Add the Brussel sprouts and cook stirring often until lightly brown, 2-3 minutes.
- Then add the oil and coat. Mix in the onion, ginger, garlic and salt. Add the water, then reduce heat to medium and cook covered until vegetables are tender, 1-2 minutes. Add pepper to taste, then serve.
