Sorghum Berry Breakfast Porridge

Yields 3 servings

Ingredients

  • 1 tsp. coconut oil
  • 1/2 cup whole grain sorghum
  • 2 cups unsweetened milk of your choice
  • 1 tsp. vanilla extract
  • 1/2 tsp. cinnamon, ground
  • 1/4 tsp. ginger, ground
  • 1 Tbsp. sorghum syrup, honey or maple syrup
  • Berries of choice, fresh or frozen
  • 2 Tbsp. chia seeds
  • 1/4 cup almonds, sliced

Instructions

  1. Grease a small 1.5 quart crockpot with coconut oil.
  2. Add the sorghum, milk, vanilla, cinnamon, ginger, sweetener, and berries and combine.
  3. Cover and cook on low for 8 hours or for 4 hours on high.
  4. Once cooked, mix in the chia seeds and let sit for 5-10 minutes.
  5. Divide into 3 equal servings. Top with additional ingredients if desired.

Nutrition per serving: 330 calories, 49 g carbohydrates, 10 mg cholesterol, 11 g fat, 8 g fiber, 13 g protein, 75 mg sodium, 18 g sugar.
