Super Seed Snack Bars

Yields 25 servings

Ingredients

  • 1/3 cup tahini
  • 1/3 cup honey
  • 1 tsp. vanilla extract
  • 1/4 tsp. salt
  • 1 cup shredded unsweetened coconut
  • 1/2 cup raw unsalted pepitas (pumpkin seeds)
  • 1/2 cup unsalted sunflower seeds
  • 1/4 cup chia seeds
  • ¼ cup hemp seeds

Instructions

  1. Preheat the oven to 325° F. Set aside an 8x8 inch baking pan lined with parchment paper. Coat baking pan and parchment paper with cooking spray.
  2. In a small saucepan over medium heat, combine the tahini and honey. Stir together until warm and well mix, around 2 minutes. Remove from heat and mix in vanilla and salt.
  3. In a medium bowl, combine the coconut, pepitas, sunflower seeds, chia seeds and hemp seeds, then add the tahini honey mixture and combine. Pour the mixture into the baking dish and press together firmly.
  4. Bake for 30-35 minutes or until golden. Remove from oven and let cool completely. Remove from pan and cut into 25 pieces.

Nutrition per serving: 90 calories, 6 g carbohydrates, 7 g fat, 1 g fiber, 2 g protein, 25 mg sodium, 4 g sugar.
