Sweet and Spicy Jicama Salad

Yields 6 servings

Ingredients

  • 2 small jicama, peeled & cut into strips
  • 2 navel oranges, peeled & cut into chunks
  • 1 large red bell pepper, diced
  • ½ hothouse cucumber, diced
  • 3 small sweet yellow peppers, sliced
  • 2 small sweet orange peppers, sliced
  • 4 radishes, thinly sliced
  • 3 Thai chili peppers, minced
  • ½ jalapeno pepper, diced
  • ½ bunch cilantro, chopped
  • 1 lemon, juiced
  • Black pepper to taste

Instructions

  1. Add all ingredients to a large bowl and toss. Cover the bowl and refrigerate for at least 30 minutes to let the flavors blend. Then serve and enjoy!
