Sweet Potato Fries

Yields 4-6 servings

Ingredients

  • 2 lbs. sweet potatoes, peeled
  • 2 Tbsp. olive oil
  • 1 tsp. garlic powder
  • 1 tsp. paprika
  • 1 tsp. salt
  • 1/2 tsp. black pepper

Instructions

  1. Preheat oven to 400°F. Set aside 1-2 rimmed baking sheet.
  2. Cut the sweet potatoes into 1/4 x 1/2 inch wide and 3-inch-long sticks. Place in a large bowl and toss with oil.
  3. Mix together the spices in a small bowl and toss with the sweet potatoes. Spread sweet potato sticks out on the baking sheets in a single layer.
  4. Bake for 15 minutes or until lightly browned and crispy on the bottom, then flip and cook on the other side for about 10 minutes or until crisp. Serve hot.
