Swiss Chard with Garbanzo Beans

Yields 4 servings

Ingredients

  • 2 lbs. Swiss chard
  • 2 Tbsp. extra-virgin olive oil
  • 2 oz. pancetta, cut into ¼ inch pieces
  • 2 Tbsp. shallot, finely chopped
  • Pinch of red pepper flakes
  • 1, 15 oz. can chickpeas, drained & rinsed
  • Salt & pepper to taste

Instructions

  1. Rinse chard well in a sink of cold water. Remove from water and set aside.
  2. Cut off the stems and chop them into ½ inch pieces. Stack the leaves and coarsely chop them. Keep leaves and stems separate.
  3. Heat the oil in a large skillet over medium-high heat. Add the pancetta and cook until browned, for around 3 minutes. Add shallots and red pepper flakes, stir and cook an additional 2 minutes.
  4. Add the chard stems and chickpeas and mix. Cook until stems are tender, around 4 minutes. Next, add the chard leaves and combine. Cover with a lid and continue to cook another 5 minutes. Stir occasionally. Season with salt and pepper to taste. Serve hot.
