Tomatillo Guacamole

Yields 1½ cups or 6 servings

Ingredients

  • 1/2 lb. fresh tomatillos, husks removed
  • 1 jalapeno, seeded & chopped
  • 10 sprigs cilantro
  • Salt to taste
  • 2 small avocados, ripe
  • 1 Tbsp. lime juice, fresh

Instructions

  1. Preheat the boiler and set aside a baking sheet lined with foil.
  2. Place the tomatillos, stem side down, on the baking sheet. Broil for 2-5 minutes or until charred on one side. Flip the tomatillos over and broil an additional 2-5 minutes until charred on the other side.
  3. Remove from oven, let cool, then place in a blender or food processor along with any juice left on the baking sheet.
  4. Add the jalapeno, cilantro, and salt. Blend or pulse until ingredients are a coarse purée.
  5. Next, cut avocados in half and remove the pit. Scoop out the avocado flesh with a spoon and place in a medi-um bowl. Mash the avocados with a fork, and then transfer the tomatillo mixture into the bowl along with the lime juice and mix until combined. Serve within 1-2 hours for best quality. Use on tacos, sandwiches, or eat with tortilla chips.
