Turmeric Rice

Yields 4 servings

Ingredients

  • 2 Tbsp. butter
  • 1/2 onion, diced
  • 1 garlic clove, minced
  • 1 cup basmati rice
  • 1 Tbsp. turmeric, ground
  • 1 1/2 cups vegetable or chicken broth
  • 1 bay leaf
  • 1 tsp. thyme, dried
  • Salt and pepper to taste

Instructions

  1. Using a medium saucepan, sauté the onion and garlic in 1 tablespoon butter until soft.
  2. Add the rice and turmeric and stir until combined.
  3. Add the broth, bay leaf, and dried thyme. Bring to a boil, cover, and simmer for 17 minutes or until stock is absorbed.
  4. Remove from heat, and stir in the remaining butter. Remove the bay leaf and serve.
