Twice Baked Sweet Potatoes

Yields 6 servings

Ingredients

  • 6 sweet potatoes of similar size
  • 4 Tbsp. brown sugar
  • 4 Tbsp. butter, room temperature
  • 4 oz. cream cheese, room temperature
  • 1/2 tsp. cinnamon, ground
  • 1/4 tsp. nutmeg, ground
  • 1/4 tsp. ginger, ground
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F. Puncture sweet potatoes with a fork prior to baking.
  2. Place the sweet potatoes on a baking sheet and bake for one hour or until soft. Remove from oven and set aside until cooled.
  3. Cut the sweet potatoes in half. Remove the flesh and place in a bowl, set aside the skins.
  4. Add the brown sugar, butter, cream cheese and spices to a separate bowl and mix the ingredients together.
  5. Add the cream cheese mixture to the sweet potato flesh and combine. Then add the combined mixture to the potato skins.
  6. Bake for 15 minutes or until thoroughly warm
