Twice Baked Sweet Potatoes
Yields 6 servings
Ingredients
- 6 sweet potatoes of similar size
- 4 Tbsp. brown sugar
- 4 Tbsp. butter, room temperature
- 4 oz. cream cheese, room temperature
- 1/2 tsp. cinnamon, ground
- 1/4 tsp. nutmeg, ground
- 1/4 tsp. ginger, ground
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F. Puncture sweet potatoes with a fork prior to baking.
- Place the sweet potatoes on a baking sheet and bake for one hour or until soft. Remove from oven and set aside until cooled.
- Cut the sweet potatoes in half. Remove the flesh and place in a bowl, set aside the skins.
- Add the brown sugar, butter, cream cheese and spices to a separate bowl and mix the ingredients together.
- Add the cream cheese mixture to the sweet potato flesh and combine. Then add the combined mixture to the potato skins.
- Bake for 15 minutes or until thoroughly warm
