Cinnamon Apple & Pear Amaranth Porridge

Ingredients
- ½ cup amaranth
- 2 cups water
- ½ cup apple, diced
- ½ cup apple, diced
- 2 tbsp. maple syrup
- 1 tbsp. ground cinnamon
- Dash of ground nutmeg
- Toppings: nuts, seeds, milk of choice, shredded coconut, etc. if desired.
Instructions
- Bring water and amaranth to a boil in a saucepan, reduce heat to simmer, cover with a lid and cook for 20 minutes or until water is absorbed.
- In a different saucepan, add diced apples, pears, maple syrup and cinnamon. Cook until softened, about 10-15 minutes.
- Mix prepared amaranth and cooked fruit mixture together. Add walnuts, milk of choice and maple syrup if desired.
