Kohlrabi Apple Salad with Walnut Vinaigrette

Ingredients

  • SALAD INGREDIENTS:
  • 1 medium kohlrabi, peeled & diced
  • 1 granny smith apple, diced
  • 1 cup carrots, shredded
  • 3 tbsp. lemon juice, fresh
  • ¼ tsp. salt
  • 1 cup basil, chopped
  • WALNUT VINAIGRETTE INGREDIENTS:
  • ½ cup chopped walnuts
  • 2 tbsp. apple cider vinegar
  • 4 tbsp. extra virgin olive oil
  • 3 tbsp. water
  • ¼ tsp. salt
  • ⅛ tsp. pepper
  • 2 tsp. honey

Instructions

  1. In a skillet over medium-low heat, add walnuts to lightly roast, stirring frequently until fragrant. Set aside to cool.
  2. In a large bowl combine kohlrabi, apple, and carrots. Add lemon juice and ¼ teaspoon salt and mix.
  3. In a blender, puree toasted walnuts, vinegar, olive oil, salt, pepper, honey and water until smooth.
  4. Add vinaigrette and basil to the salad, toss and serve.
