Asparagus Spaghetti

Yields 8 servings

Ingredients

  • 2 lbs. fresh asparagus, cut into 1 inch pieces
  • 16 oz. spaghetti
  • 8 bacon strips, chopped
  • 4 green onions, sliced
  • 1/2 tsp. pepper
  • 1/2 cup half and half
  • 1/2 to 3/4 cup Parmesan, grated
  • 1/4 cup butter, cubed

Instructions

  1. Bring 1/2 inch water to a boil in a large saucepan. Add asparagus, cover and cook for 3-5 minutes or until tender-crisp. Drain water and set asparagus aside.
  2. Cook spaghetti in 6 quart stockpot in boiling water according to package instructions. In the meantime, heat a large skillet over medium heat, add the bacon, stirring occasionally, and cook until crisp. Remove bacon with a slotted spoon and drain on paper towels.
  3. Add green onions to the bacon grease and cook for 1-2 minutes or until tender. Then add the asparagus and pepper and heat thoroughly.
  4. Drain pasta and return to the stockpot. Add the asparagus mixture, cheese, cream, butter and bacon. Toss ingredients together until butter is melted and serve immediately.
