Roasted Kohlrabi with Parmesan
Yields 4 servings
Ingredients
- 6 kohlrabi, peeled & cut into 1 inch wedges
- 2 Tbsp. olive oil
- 1/2 tsp. salt
- Pinch of cayenne
- 3 Tbsp. Parmesan, grated
- 1 Tbsp. fresh parsley, chopped
Instructions
- Preheat the oven to 450°F. Set aside a rimmed baking sheet.
- Toss the kohlrabi with olive oil, salt and cayenne. Place on a baking sheet in a single layer.
- Roast for 30 minutes or until soft. Stir the kohlrabi every 10 minutes for even baking. Remove from oven and add the Parmesan and parsley, then serve.
