Roasted Beet Salad with Walnuts & Goat Cheese
Yields 6 servings
Ingredients
- 3 medium beets, washed & trimmed
- 1/4 cup extra-virgin olive oil
- 2 Tbsp. sherry vinegar
- 1 Tbsp. honey
- 1 Tbsp. red onions, minced
- 1/2 tsp. Dijon mustard
- 4 cup baby spinach
- 1/2 cup goat cheese, crumbled
- 1/2 cup walnuts, chopped
Instructions
- Preheat oven to 400°F. Wrap the beets in foil and bake in the oven for 1 hour or until tender. Remove and let cool. Once cool, remove the skin and dice.
- In a medium bowl, whisk the oil, vinegar, honey, red onions, and Dijon.
- Next add the beets and spinach to the dressing and toss. Sprinkle the goat cheese and walnuts on top and serve.
