Roasted Beet Salad with Walnuts & Goat Cheese

Yields 6 servings

Ingredients

  • 3 medium beets, washed & trimmed
  • 1/4 cup extra-virgin olive oil
  • 2 Tbsp. sherry vinegar
  • 1 Tbsp. honey
  • 1 Tbsp. red onions, minced
  • 1/2 tsp. Dijon mustard
  • 4 cup baby spinach
  • 1/2 cup goat cheese, crumbled
  • 1/2 cup walnuts, chopped

Instructions

  1. Preheat oven to 400°F. Wrap the beets in foil and bake in the oven for 1 hour or until tender. Remove and let cool. Once cool, remove the skin and dice.
  2. In a medium bowl, whisk the oil, vinegar, honey, red onions, and Dijon.
  3. Next add the beets and spinach to the dressing and toss. Sprinkle the goat cheese and walnuts on top and serve.

Nutrition per serving: 220 calories, 7 g carbohydrates, 10 mg cholesterol, 20 g fat, 2 g fiber, 5 g protein, 150 mg sodium, 3 g sugar.
